Heat olive oil in a large casserole over medium-high heat.
Add onion and garlic. Fry, stirring occasionally, until soft and browned, then add carrots and sauté for a couple of minutes.
Cut Switch Mince Meat into cubes, and add it to the pot with the vegetables. Cook for 6-8 minutes, breaking up any clumps with a spoon, until the meat is browned.
Add spices, chopped tomatoes, tomato paste, red pepper, jalapeños, vegetable stock, and water. Bring to a boil.
Reduce heat to medium-low, add kidney beans, cover, and let it simmer for 30 minutes until the chili thickens.
Pour the chili into small bowls, add vegan shredded cheddar cheese, corn, and serve with white rice.
