Heat olive oil in a large casserole over medium-high heat.
Add onion and garlic. Fry until browned, then add carrots and sauté briefly.
Cut Switch Mince Meat into cubes, add to vegetables, and cook for 6-8 minutes.
Add spices, chopped tomatoes, tomato paste, red pepper, jalapeños, vegetable stock, and water. Bring to a boil.
Reduce heat to medium-low, add kidney beans, cover, and cook for 30 minutes until sauce thickens.
Serve with vegan shredded cheddar cheese, corn, and white rice.
