Cut the frozen Switch Mince Meat into 3x3 cm cubes.
Heat olive oil and vegetable butter in a large cooking pot over medium-high heat until butter melts.
Sauté finely chopped onion, carrots, and celery until soft and slightly caramelized, around 5-8 minutes.
Add chopped garlic and sauté for a couple more minutes until fragrant.
Season sautéed vegetables with salt and pepper, then set aside.
Add Switch Mince Meat to the pot. Season with salt and pepper, cook while breaking up lumps with a wooden spoon. Brown for 6-8 minutes.
Return sautéed vegetables to the pot, add crushed tomatoes. Bring to a boil, then simmer.
Cover and cook, stirring occasionally, for 15-20 minutes until sauce thickens. Stir frequently.
Mix in shredded vegan cheese and chopped parsley. Stir well. Adjust seasoning if needed.
Serve Bolognese sauce with spaghetti pasta.
