  • 1. 250g Switch Mince Meat
  • 2. 300g medium grain rice
  • 3. 1 Tbsp vegetable ghee
  • 4. 1 kg cored baby marrow (zucchini)
  • 5. 1 tsp dry mint
  • 6. 7 cloves garlic, crushed
  • 7. 1 kg fresh yogurt
  • 8. 1/2 a cup of water
  • 9. 1 tsp white pepper
  • 10. 1 Tbsp corn flour
  • 11. Salt (to taste)

  • 01/

    Wash and strain the rice thoroughly.

  • 02/

    Brown Switch Mince Meat with oil, salt, white pepper, and all spice in a pot over medium-high heat. Break up lumps while cooking for 6-8 minutes.

    Mix cooked Switch Mince Meat with rice.

  • 04/

    Stuff zucchini with rice and Switch Mince Meat, leaving 1 cm gap at the top.

  • 05/

    Arrange zucchini in the pot.

  • 06/

    Mix water, crushed garlic, and dry mint, then pour over zucchini.

  • 07/

    Add enough water to cover zucchini, then cover the pot.

  • 08/

    Cook for 35 minutes, until the zucchini and rice are tender.

  • 09/

    Separate the zucchini and water.

  • 10/

    Place fresh yogurt in a pot on the stove.

  • 11/

    Add white pepper and water to yogurt, mix well.

  • 12/

    Boil yogurt for 30 minutes, stirring occasionally.

  • 13/

    Mix water and corn flour separately , add to yogurt, and stir well.

  • 14/

    Boil for 10 more minutes, stirring to avoid stickiness.

  • 15/

    Dip zucchini in yogurt and boil for 10 minutes.

  • 16/

    Serve hot, garnished with dry mint.
