Ingredients
  • For the Filling:
  • • 350g Switch Mince Meat
  • • 35ml vegetable oil
  • • 80g carrot cut into cubes
  • • 80g celery cut into cubes
  • • 100g white onion cut into cubes
  • • 80g green peas
  • • 10g minced garlic
  • • 5g fresh thyme
  • • 2g rosemary
  • • 40ml olive oil
  • • Salt & pepper for taste
  • • 5g crushed paprika
  • • 50g tomato paste
  • • 200ml water

  • For the Mash Potato:
  • • 300g potato
  • • 25ml cooking cream
  • • 25g butter
  • • 1 egg yolk
  • • 10g parmesan cheese
  • • Salt and nutmeg for taste
  • --------------------------------
  • For Topping:
  • • 40g bread crumb
  • • 5g chopped fresh parsley for garnish

Steps

  • For the Filling:

    01/

    In the skillet add the oil and heat in medium fire then add the Switch Mince Meat and cook for 8 minutes and keep aside.

  • 02/

    In the same skillet add the olive oil and heat in a medium fire.

  • 03/

    Add the onion and sauté for a few minutes until they start to turn brown then add all the vegetables except the peas and herbs and sauté together with the onion.

  • 04/

    When the vegetables are cooked, add the mince meat and mix gently then season with the herbs.

  • 05/

    Add the tomato paste and water and cook for 5 minutes on a low-heat fire.

  • 06/

    Finally, add the green peas and cook for another 5 minutes on a low-heat fire.

  • For the Potato:

    01/

    In the mixing bowl add the boiled potato and all the ingredients and smash with the fork until it has a unified smooth thick texture.

  • Assemble The Casserole:

    01/

    In the baking tray add 2 tablespoons of the mashed potato and spread evenly in a 20x20cm baking tray.

  • 02/

    Add the filling on top and spread evenly.

  • 03/

    Add the remaining mashed potato on top and spread evenly.

  • 04/

    Bake in the oven for 20 minutes at 200°C.

  • 05/

    Take it out from the oven, spread the bread crumb on top and then bake for 5 more minutes or until the bread crumb becomes golden.

  • 06/

    Garnish with chopped parsley and serve hot.
